Cookie Stuffy Dessert Store began in 2022 as a way for Darilyn Arroyo Santana to cover medical expenses, but what started as a necessity quickly transformed into a creative outlet and full-fledged business. After the birth of her son, Darilyn found new motivation to continue baking and sharing her love for Puerto Rican desserts.
Originally launched in Puerto Rico, Cookie Stuffy relocated to Holly Springs, North Carolina, in 2024. Today, the women-owned, family-operated business offers nearly 30 rotating cookie flavors, each handmade with distinctive textures, crispy on the outside, gooey on the inside. Cookie Stuffy also serves beloved traditional desserts like quesitos, palmeras, and besitos de coco, delivering to customers across the U.S. and Puerto Rico.
Finding Direction with Prospera’s Support
When Darilyn arrived in North Carolina, she knew she needed help navigating local regulations and setting up her food business properly. A family member encouraged her to contact Prospera, and she quickly found the guidance she needed.

Her loyal client base from Puerto Rico still supports her from afar, and she’s focused on reaching new audiences in the continental U.S. Looking ahead, Darilyn hopes to expand into new markets and eventually open her own storefront.
